Wild Garlic Pesto Stuffed Bread
Ingredients:
350g Flour
10g fresh Yeast
50ml Water, lukewarm
200ml Buttermilk
50 ml Olive oil
1 ½ Tsp Salt
Pinch of sugar
Ingredients for Pesto:
1 bunch of Wild Garlic
80 g Pine nuts
50 ml Olive oil
25g Parmesan, grated
100g Mozzarella, grated
Prep.time: 90 minutes
Baking time: ca 20-22 minutes
You’ll need: Herb Chopper, Dough hook
- In a bowl mix water, sugar and yeast and let stand for 15 minutes until bubbles form
- Attach dough hook, add flour, salt, buttermilk, yeast mixture and olive oil and knead dough on medium speed.
- Cover bowl with cling film and leave to rise for an hour or until doubled in size
- For the filling, add wild garlic, pine nuts, olive oil, parmesan and a pinch of salt in the herb chopper and blend until smooth
- Preheat the oven to 180C (fan forced)
- Divide dough into 6, and roll out to a rectangle
- Spread the filling on the dough, sprinkle with mozzarella and roll it up
- Tuck in the edges, cover buns and leave it for 20 minutes to rise
- Using a sharp knife make a few cuts lengthwise, brush the top will olive oil and bake for 20-22 Minutes until golden
