Wild Garlic Pesto Stuffed Bread


350g Flour

10g fresh Yeast

50ml Water, lukewarm

200ml Buttermilk

50 ml Olive oil

1 ½ Tsp Salt

Pinch of sugar


Ingredients for Pesto:

1 bunch of Wild Garlic

80 g Pine nuts

50 ml Olive oil

25g Parmesan, grated

100g Mozzarella, grated


Prep.time: 90 minutes

Baking time: ca 20-22 minutes

You’ll need: Herb Chopper, Dough hook


  1. In a bowl mix water, sugar and yeast and let stand for 15 minutes until bubbles form
  2. Attach dough hook, add flour, salt, buttermilk, yeast mixture and olive oil and knead dough on medium speed.
  3. Cover bowl with cling film and leave to rise for an hour or until doubled in size
  4. For the filling, add wild garlic, pine nuts, olive oil, parmesan and a pinch of salt in the herb chopper and blend until smooth
  5. Preheat the oven to 180C (fan forced)
  6. Divide dough into 6, and roll out to a rectangle
  7. Spread the filling on the dough, sprinkle with mozzarella and roll it up
  8. Tuck in the edges, cover buns and leave it for 20 minutes to rise
  9. Using a sharp knife make a few cuts lengthwise, brush the top will olive oil and bake for 20-22 Minutes until golden
