Vegan Avocado Ice Cream

Ingredients:

2 Avocado

2 limes, zest, and juice

250 ml full fat coconut milk

1 tsp vanilla extract

100 ml Agave syrup

Prep. time: 20 minutes

Cooling time: min 1 hour

You’ll need: Ice Cream Maker, Blender or Food Processor

 

You’ll need to start the recipe a day ahead!

  1. Make sure that all ingredients are cold!
  2. Using the Food Processor or Blender, puree the meat of the avocado with lime juice and zest.
  3. Add coconut milk, agave syrup, and vanilla extract to avocado puree and blend until smooth.
  4. Attach the ice cream maker to the Cooking Chef. Pour in the avocado mixture into the container of the ice cream maker and allow to freeze for about 15 minutes.
