Tyrolean Bacon Dumplings

Ingredients (serves 4-6):


ca.250 g  bread

ca. 200-250 ml milk

2 eggs

3-4 tablespoons breadcrumbs

100 g bacon, diced

1 small onion

20 g of butter

2 tablespoons chives

1 tablespoon fresh parsley

1½ l vegetable or beef stock

salt and pepper


Preparation: 30 minutes

Cooking time: 12-15 minutes

  1. Pour warm milk and beaten egg over the chopped bread and let it soak for a few minutes.
  2. Roast the bacon in butter.
  3. Add the bacon, onion, chives, and parsley to the bread and mix well.
  4. Mix in the bread crumbs. (If the dough is too wet, add more crumbs.)
  5. Form 8-12 dumplings with wet hands and cook for 12-15 minutes in simmering broth.
  6. Serve with beef -, vegetable stock or mushroom sauce.
