Spicy Vegetable Ragout

250 g pumpkin, diced
2 carrots, diced
200 g of cauliflower
1 onion
2  garlic cloves
270 g coconut milk (1 can)
1 teaspoonginger, ground
½ teaspoon coriander, ground
1 tablespoon Sambal Mahoi or Sambal Oelek
ca. 100-150 ml vegetable stock

Prep.time: 15 minutes

Cooking time: 30 minutes

  1. Attach stirring too to Cooking Chef and set the temperature to 140 ° C.
  2. Add some oil into the mixing bowl and sauté the vegetables for 10 minutes.
  3. Stir in Sambal Mahoi, ginger, and coriander to the vegetables and cook for 5 minutes.
  4. Finally, add vegetable stock and coconut milk, reduce the temperature to 120 ° C and cook vegetable ragout for about 25-30 minutes.  Serve with rice, bulgur or couscous.
