Snowy Mountain Cookies – Matterhorn Biscuit with Meringue Cream


24 Kambly Matterhorn
1 egg white
60g sugar
couple of drops of coconut, rum or almond aroma

Prep.time: 10 minutes



  1. Beat the egg whites and sugar over a water bath with a hand mixer until creamy, then add a drop of coconut flavor (rum or almond).
  2. Fill the cream in a pastry bag.
  3. Pipe the cream on one half of the Matterhorn biscuit, and sandwich with another biscuit.
  4. Toast the meringue with a blow torch.
