Plum And Walnut Pancakes

Ingredients (makes 6 pancakes):

5 plums, thinly sliced
40 g sugar
150 g flour
35 grams walnuts
200 ml milk
1 egg
1 tablespoon butter, melted
½ lemon zest
1 teaspoon vanilla extract
1 teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon cinnamon, ground
a pinch of salt
1-2 tablespoon butter for baking

Prep.time: 10 minutes

Cooking time: 3-4 minutes pro pancakes

You’ll need: Food processor

 

Method:

  1. Blend sugar, flour, walnuts, milk, ice, butter, lemon zest, vanilla, baking soda, baking powder, cinnamon and a pinch of salt in food processor.
  2. Melt butter over medium heat in a pan.
  3. Spoon the batter in portions in the pan, and top it with some plum slices. Bake 3-4 minutes on both sides.
  4. Serve with double cream and maple syrup.
