Mini Berry Pies

Ingredients (about 4 small or one 20cm baking tin):
240 g  flour
125 g  butter
½ pack of vanilla sugar
1 lemon zest
1 egg

Filling:
50 g white almond paste
1 tablespoon of milk
200 g blackberries and blueberries mixed
1 tablespoon caster sugar
½ pack of vanilla sugar
1 teaspoon cornstarch
1 egg yolk for brushing

Prep.time:40 minutes

Cooking time: ca.18 minutes

You’ll need: Food Processor

1. Put flour, butter, vanilla sugar, lemon zest and egg in Food Processor and blend well
2. Wrap the dough in plastic wrap and refrigerate for 20 minutes
3. Preheat the oven to 180 C (fan forced)
4. Roll out the pie dough on a lightly floured work surface 3 mm thick. Cut out 4 circles. Use the remaining dough as decoration.
5. Lay the pie-forms with dough circles, press lightly.
6. For the filling, mix the almond paste with milk and spread on the bottom of the dough.
7. Mix blackberries and blueberries with powdered sugar, vanilla sugar and cornstarch, and spoon into the pie-forms.
8. Using a knife, cut the remaining dough into strips approx. 0.5 cm wide, place them on the fruits like a lattice, lightly press on the edges, and brush with egg.
9. Bake pies for about 18 minutes until golden brown
