Fennel – Tangerine Salad

Ingredients:

2 fennel bulbs
4 tangerines
1-2 teaspoons grainy mustard
3 tablespoons  white wine vinegar (preferably barrique)
salt and pepper

Preparation: 10 minutes
Cooking time: 0
Accessories: Food Processor

 

Method:

  1. Remove the green from the fennel, and put it aside.
  2. Grate the fennel in Food Processor.
  3. Juice two of the tangerines, mix with grainy mustard and vinegar, season with salt and pepper.
  4. Mix the other two tangerines with the grated fennel and serve with tangerine salad sauce and fennel greens.
