Fennel – Tangerine Salad
2 fennel bulbs
1-2 teaspoons grainy mustard
3 tablespoons white wine vinegar (preferably barrique)
salt and pepper

- Remove the green from the fennel, and put it aside.
- Grate the fennel in Food Processor.
- Juice two of the tangerines, mix with grainy mustard and vinegar, season with salt and pepper.
- Mix the other two tangerines with the grated fennel and serve with tangerine salad sauce and fennel greens.
